A summer salad that is sure to please

Growing up in Indiana, I’ve always had a love for fresh, sweet Indiana corn. In my opinion there is nothing like it. At the start of the season, I found myself in the kitchen experimenting with my favorite local vegetable, and my favorite summer fruit: peaches. When paired together with a little honey and a little lime, it is a match made in heaven.  Have a little fun and whip up this summer salad featuring two dynamic co-stars, Peach and Corn. I think you’ll be surprised at how well they go together. Good eats!

Sweet Corn and Peach Salad with Honey Lime Vinaigrette

For the Salad

3 Ears of fresh corn, cut off the cob

2 large juicy peaches chopped

1 larger Roma tomato, diced

1 large shallot diced

1/2 cup fresh cilantro, minced

1/3 cup Feta Cheese (optional)



For the Vinaigrette

1/4 cup Fresh Lime Juice

1/4 cup Extra Virgin Olive Oil

2 Tablespoons White Vinegar

2 Tablespoons Honey





To build salad, combine salad ingredients together a large bowl. Stir well to combine.

To build dressing, combine lime juice, honey, oil, salt, paprika, pepper and shake well until combined.

Pour dressing over corn salad and toss lightly until coated.

Serve immediately.


Feta Cheese may be omitted.
